The Easiest Valentine’s Day Dinners You’ll Ever Make

Need a last-minute Valentine’s Day dinner idea? Something easy and quick, but a little more thoughtful than a heart-shaped delivery pizza (although, this $62.00 Chicago gourmet deep dish available on Amazon just might do the trick)?

If you can get to the grocery store for a few relatively simple items, you can whip up a number of refined, unfussy meals that demand little in the way of forethought or active preparation, without seeming thrown-together. Easier than snagging an eleventh hour reservation, and decidedly more romantic than plastic takeout clamshell containers, too!

Whether you totally forgot Valentine’s Day was coming up and you need to make it look like you had it covered all along, or you just found a last-minute Tinder date you want to woo with an impressive but labor-light meal (because, hey, you never know if it’ll be worth it), these options are easy-peasy yet fancy-schmancy enough to elicit adoration. And if you’re spending the “holiday” alone, why not treat yourself—to a marvelous meal and a relaxing evening?

Curate a Cheese Plate

Gather a bunch of artisanal cheeses, charcuterie, nuts, and fruit, perhaps a nice jar of mustard or preserves, good bread or a couple different high-quality crackers, a bottle of wine or craft beer, and some dark chocolate (or Reese’s hearts, if you prefer), and make a lavish spread on your nicest plate or serving platter once you get home. A few minutes of slicing and artful arrangement and you have a lovely meal. Make a Marvelous Instant Pot Meal

If you have an Instant Pot (or any other pressure cooker), you can make all sorts of normally time-consuming fancy fare in a flash, from risotto to coq au vin and beef bourguignon—Julia Child herself would approve. Either of the latter recipes would be great over mashed potatoes, which, conveniently enough, you can make at the same time in the Instant Pot, if you have a metal steamer basket you can nestle on top.

Go For Old-School One-Pot (and One-Pan) Dinners

If you don’t have a pressure cooker, don’t sweat it. Regular one-pot and one-pan meals can still save you time (on cooking and clean-up), but if you choose them wisely, they’ll still seem elegant enough for a special occasion. Take these, for example:

Adding black olives (good-quality, not from a tin can) and whole lemon slices elevates chicken thighs to something Valentine-worthy; the carrots and potatoes add enough heft to satisfy, and they all cook in the same pan. The harissa packs some heat, but you could go with gentler herbes de Provence if so inclined (in which case, add some fresh fennel too). For a side dish, couscous cooks in minutes and is easily dressed up with fresh lemon juice, salt and pepper, a touch of garlic, and fresh herbs. Get the recipe.

Cook your spaghetti and homemade sauce in a single pasta pot, at the same damn time. For something even simpler but less saucy, get our Cacio e Pepe recipe, but spaghetti was the first date dinner choice for Lady and the Tramp, so it gets the edge. Make it meatless if you wish. Another one-pot pasta (that feels more like rice), this Greek-flavored chicken and orzo bake achieves elegance with fresh oregano and feta sprinkled on top of each bowl. Get the recipe.

Serve Store-Bought Stuff, with Improvements

If you really don’t have a lot of time (or kitchen skills), you can always buy ready-made ingredients and turn them into something special:

  • Give store-bought ravioli some pizzazz with chopped sun-dried tomatoes (oil-packed), toasted pine nuts, and wilted spinach; be careful not to overcook the pasta, then gently stir in all the other ingredients and let the greens wilt for a moment before serving. Add a green salad with a simple lemon-and-oil vinaigrette on the side (good advice for many of these dinners, really).
  • Grab a rotisserie chicken and shred the meat to use in a homemade pot pie; it’s way easier than you might think, especially when you also use store-bought puff pastry for the lid, and mixed frozen peas and carrots in place of fresh vegetables—for a little Valentine’s Day flair, cut small hearts out of the top instead of plain old venting slits. You can halve the recipe and divide it among ramekins for a more precious presentation.
  • Rotisserie chicken also pairs well with pre-made gnocchi and a simple cream sauce; see this one-pot gnocchi recipe for proof.
  • If you must resort to jarred spaghetti sauce, try this brilliant trick from Raquel Pelzel’s Toast cookbook: blitz up some pepperoni butter and stir it into the warmed sauce until well incorporated before plating it with pasta. Scatter some real, freshly grated Parmesan (not the stuff from the green can) and some fresh basil on top and you’ve got it made.

Don’t Forget Dessert

If you’re not about baking, you can still pull off a dessert with panache. Consider simply broiling some fruit with a little brown sugar and butter (and maybe a splash of booze), then add a scoop of ice cream, crème fraiche, or even soft cheese, and a scattering of chopped pistachios or hazelnuts, cocoa nibs, or crumbled cookies, plus a drizzle of honey, caramel, or chocolate syrup. How to Get Married at Your Favorite Fast Food Restaurant

According to a survey by The Knot, the average wedding in the United States costs $35,329. That’s a lot of money to spend on a party, especially if you’re not all that thrilled by the trappings of a historically patriarchal institution. Maybe you just want to celebrate your undying love without the lavish trappings of diamonds and ballrooms? So what’s the best way to lash out against the wedding industrial complex? By indulging in the fast food industrial complex! Here’s how.

More and more folks are exchanging their vows with a side of burgers and fries. And nowhere is this trend more apparent than in the elopement wonderland that is Las Vegas. If you’re in town and don’t want to get married by an Elvis impersonator, hit up the Taco Bell instead—it houses an actual chapel! For $600, you can purchase an entire wedding package. This includes a half-hour ceremony, a private reception area for up to 15 of your closest friends, a taco 12-pack, a bevy of kitschy merch such as a bowtie, garter belt, and the pièce de résistance: a bouquet made of hot sauce packets! Word has it that the bridesmaid who catches it is in for a spicy treat.

If you’re more partial to diners, head to Denny’s. The Vegas franchise offers wedding packages, as well. They, too, are complete with chapel ceremonies, photo booth pics, and Grand Slam Breakfasts. They’ve also got a sweet Valentine’s Day sale going on, with weddings costing only  99 bucks! (Just in case the prices at Taco Bell are too steep for your budget.)

Apparently so many people are clamoring to get married at White Castle that the company had to hold a contest last June to appease demand. Okay, that’s a bit of an exaggeration, but as a marketing gimmick, it worked. I mean, hey, we’re writing about it. While more than 75 couples have wed at various locations of the regal restaurant over the last decade, none have been officially sponsored until now. The lucky winners won a royal wedding at their Vegas location, as well as a honeymoon in Belgium, where they’ll visit an actual castle. It’ll mark the first wedding ever where sliders are served as an entree instead of an appetizer.

If Big Mac-trimony is more your style, you’ll have to head overseas, because McDonald’s has yet to establish any official wedding deals in the United States. But in Hong Kong, packages range from $385 for the Happiness Party to about $1,280 for the Love Forever Party. Just don’t let Ronald McDonald act as your officiant because that would be creepy AF. Also, be sure to include this line in your vows: May your love be as eternal as the McRib. (Trust us, it will never go away.)

While Domino’s doesn’t offer any official wedding packages, they do offer an official wedding registry, where you can gift the newlyweds with the pizza of their preference. It answers that time old question: What do you get for the pizza-loving couple that has everything? Clearly, more pizza. Sure beats another salad spinner from Crate & Barrel.

A Craft Beer Was Launched Into Space, Because All the Cool Kids Are Doing It

Taking a cue from Tesla, one craft brewery decided to launch its beer into space. However, Oregon’s BridgePort Brewing took a more DIY approach than Elon Musk. Without the use of any rockets, they launched one of their The Original IPAs 22 miles into the sky. At that height, the beer made it all the way into the stratosphere. We’re no astronomers, but that’s considered space, right?

So how did they pull it off? The magic and science of balloons! Before you start catapulting your own bottles of beer into the air from your own front lawn, you should know the brewery got official clearance from the FAA. They pulled off the stunt in the middle of the West Texas desert and there’s also video evidence of the whole ordeal. So if you’re impressed by alcohol that flies somewhere other than your mouth, this is the clip for you. Check it out below:

But what is even the point of launching beer—or anything that isn’t people—into outer space? Beyond being a trendy, tech-y way of garnering brand attention, that is. We’re not really sure, but BridgePort’s marketing department has a more metaphorical explanation behind their reasoning.

“The richness of the region’s hop fields inspired BridgePort and set the benchmark for the IPA style,” said Gregor Mina, director of marketing. “Hop boundaries were pushed way out and we felt it would be fun to send the brew that helped shape the category ‘way out there’ into space and mark another first for BridgePort IPA.”

It’s literally a high water mark for the craft brewery. In the meantime, Budweiser is still trying to become the first beer on Mars (no seriously, they are.). Though I’m pretty sure aliens have better taste in alcohol. Let’s just hope the company isn’t responsible for interplanetary warfare!
