What Is the Difference Between Types of Vanilla?

You just wanted to make a cake and now you’re standing in front of a row of different types of vanillas, unsure of which one to choose.

With different price points and packaging, they all seem pretty exotic, but which one will be the best for what you’re making?

And, since vanilla is the second-most expensive ingredient in the world (second only to saffron), how will you make sure you’re buying the one that will offer you the most options?

There are over 150 types of vanilla in the world, including Indian vanilla, Tonga vanilla, and Ugandan vanilla—but the two most prevalent types found in most stores are Madagascar or bourbon vanilla, and Tahitian vanilla. Also worth a look: Mexican vanilla, as it’s made from the very same plant as bourbon vanilla, and Mexico is, in fact, the birthplace of vanilla.

We found out straight from the experts what makes each of these three types of vanilla the same, or different, from the next in hopes that you won’t ever have to put baking a cake on hold to debate this ingredient choice ever again.

Mexican Vanilla

According to Michel Mustiere, Culinary Director of Velas Resorts, with multiple locations throughout Mexico, Mexican vanilla is cultivated in Veracruz, Mexico, and is the product of an orchid that gives birth to the vanilla flower after pollination.

Mustiere explains that the vanilla is harvested after the flower dies, usually around nine months, and then the green pod is cut from the plant. The pod, he says, is then allowed to dry for 20 days, then undergoes a fermentation process.

“After 20 days of drying, the vanilla pods are placed in wooden boxes and covered with palm rugs, to ripen them to finally place them in vacuum packaging, and thus preserve their notes and their flavor,” he says, adding that the vanilla is usually aged for two to three months.

This process seals in the complex flavor and aroma of the vanilla. According to Mustiere, you can pick up all of these notes: “metallic, astringent, smoked, pungent, toasted, gritty, spiciness of tuberose, sweet, clove, black pepper, cinnamon, raisin, wood, wet earth, dry chili, cocoa, tamarind, sesame, and mold.” (So not dissimilar to tasting good wine.)

And while it may not be as easy to pick out Mexican vanilla with an untrained palate, there is a way to tell it apart from other vanillas by just looking at it. Mexican vanilla, says Mustiere, is thinner, as opposed to Tahitian vanilla, which is thicker. He also notes that it is more subtle and delicate on the palate than other types of the flower.

“We use the vanilla originally from Mexico, because it has a peculiar flavor and smell that is [unique to] the type of land where it is planted,” he says, explaining that both the particular taste and aromas are distinct to the Mexican vanilla. (Again, not unlike wine, which is so heavily influenced by terroir.)

Madagascar Vanilla

Also called bourbon vanilla, Madagascan vanilla comes from the same plant and has the same basic flavor notes as Mexican vanilla. The only significant difference is that in Mexico, the plant is pollinated by a bee and in Madagascar, humans need to pollinate the flower, leading to its higher price. (And despite the name, it is not actually made with bourbon whiskey; instead, “Bourbon” refers to a place where this vanilla was grown.)

The vanilla orchid was initially brought from Mexico to the areas surrounding the Indian Ocean in the 1800s, and those lands now supply two-thirds of the world’s vanilla.  Madagascar leads the pack, with Indonesia in second place (while Indonesian vanilla comes from the same plant, it is said to have a smokier aroma and taste than creamier, sweeter Madagascan and Mexican vanilla).

Tahitian Vanilla

In the Pacific Ocean, there is an island in Tahiti that is referred to as “Vanilla Island.” It got its name because 80 percent of the country’s vanilla is produced there.

Tahitian Vanilla (Vanilla tahitensis) is a natural hybrid between two vanilla species: Vanilla planifolia, better known as bourbon vanilla, and Vanilla odorata, a very rare vanilla found in the forests of Belize and Guatemala. “It represents only 1 percent of the global production of vanilla,” says Thibault Uzeel, Assistant Food and Beverages Manager for Pearl Resorts of Tahiti.

During the growing period, he says, Tahitian vanilla is fertilized by hand. After nine months, it’s picked, dried under the sun, and then packaged in vacuum flasks in the absence of light to preserve the flavor.

The flavor of Tahitian vanilla is heavily influenced by the tropical climate and the soil, he says, and contains flavor notes of caramel and anise, with delicate touches of chocolate that melt in the mouth.

Bottom Line

Baking with any of these vanilla varieties will result in delicious desserts, but for simpler things like vanilla pound cake or homemade vanilla ice cream, try using different kinds to really highlight their specific characters.

Friday Food Finds: Pumpkin Cake Roll Ice Cream, Mystery Oreos, Kale Seasoning, and More!

Whether you like it or not, pumpkin spice season has arrived and brought with it a tsunami of brand new products that I obviously can’t wait to try (#basicbitch). Two made this week’s Chub Chub Chowdown segment on the Taylor Strecker Show (featuring special guests Donny Meacham and Jasen Kaplan), but did they earn our Chowhound seal of approval? You’ll have to read on to find out! (P.S. Mystery Oreos are back and we’re all kinds of confused. Are they Teddy Grahams? Are they snickerdoodle? Jeni’s Ice Cream (Pumpkin Cake Roll)

In the least surprising news ever, Jeni’s has introduced yet another amazing flavor to their line of famous ice creams. Pumpkin Cake Roll is a perfect fall treat full of real pumpkin flavor, sans the artificiality you’d expect to find in many mainstream brands. I may have accidentally called it “potato”-flavored on the show, but one thing’s for certain: this is no spud, err, dud.

Sheetz Brewberry Muffinz Craft Beer 

Wow! This craft brew legit tastes like a blueberry muffin. Who needs a carb and sugar bomb in the morning when you can just chug a beer instead? I kid, I kid (kind of). For those lucky enough to live near a Sheetz store, it’s absolutely worth the splurge, if only to remind yourself that there’s a world of beer beyond Bud Light.

Imag!ne Yogurt Crisps (Apple Cinnamon)

We were a little reluctant to try a yogurt-infused cracker, but these were fantastic. They’ve got an awesome crunch, the perfect level of sweetness, and are an ideal snack option for fall. We also dig the fact that they’re high in protein, calcium, and whole grains. Sure, the star shapes are bit childlike, but since we’re all still kids at heart, they’re a welcomed addition. Plus, if you wish upon one, your dreams of more yogurt crisps may come true.

Night Swim by Tozai Canned Sake

Move over, spiked seltzer. Canned sake is now a thing and Night Swim is one of the best varieties we’ve sampled in recent memory. It’s smooth, it’s refreshing, and it makes for an excellent bev to serve at a picnic or beach day (except R.I.P. summer). In fact, I plan to order some Japanese food tonight and knock back a can or seven, because Y.O.L.O. and T.G.I.F. and every other acronym I need to justify my drinking habits.

Bilal’s EasyKale Seasoning

While we appreciate the concept of concentrated kale seasoning, it just didn’t work in the chocolate chip cookie that the company provided. There simply is no easy way to sneak something green and nutritious into a dessert—I don’t care who you are or what you’re selling. That being said, this would probably taste great on a savory option like popcorn or guacamole. And we’ll take any excuse to make an everyday indulgence healthier IF it tastes good. Kale yeah!

Santé Pecans (Pumpkin Spice)

Santé, you stay! This is a pumpkin spice product that we can absolutely get behind. The sweet taste isn’t overwhelming, unlike more popular brands that are coated in layers of sugars and corn syrup. Instead, emphasis is placed on the actual spices of cinnamon and cloves, making it an excellent seasonal offering that you can nosh on throughout the day. Just don’t tell your coworkers, because while sharing may be caring, it surely isn’t fun.

Mystery Oreos

We’re convinced these are Teddy Grahams, but do we like them? Sure. Cinnamon plays well with chocolate, though we would have maybe preferred a vanilla cookie. Either way, they’re Oreos, which means you’re going to eat three sleeves and feel bad about yourself later. We Taste-Tested Some of the Wildest Pumpkin Spice Products

Which pumpkin spice products are actually good?

From the good to the bad to the downright ugly, we taste-tested some of the season’s best and worst pumpkin spice food and drinks so you don’t have to. Unless of course you want to.

Each year and every year until the end of days (probably) as summer slips into fall, rosé is nudged gently off the shelves of basic boys & girls everywhere and pumpkin spice assumes its rightful place as the novelty fall flavor we love to hate.

We can mostly thank Starbucks and its cult classic latte (or “PSL”), for the unending parade of sketchy items featuring pumpkin and a mix of fall spices originally intended for pie. Each year brings new spins on a pumpkin spice this, and a pumpkin spice that. At times they seem as much a publicity stunt as a serious addition to a brand’s portfolio, but any hope by detractors of this fad flavor fading into obscurity have long been been washed away. Probably by Meyer’s artisanal pumpkin spice cleaning spray.

Before we fully ascend our soapbox and decree the phenomenon with blanket condemnation, we thought we’d give a few items from the growing pumpkin spice empire the benefit of a taste test and, as luck would have it, some actually work! This list is by no means exhaustive, but rather a mix of the odd, interesting, and unexpected. Some unholy creations elicited a gasp of horror followed by “well, maybe…” while others simply sounded too good not to try.

Spice and whiskey go together like festive pumpkin-carving and the existential dread of having no artistic ability whatsoever. This proud micro-distillery (in my home state of Rhode Island!) puts out a new seasonal batch every fall but you can still find the extremely yum pumpkin spice whiskey from a few years back at certain online retailers. It’s got good balance with just enough vanilla, clove, cinnamon to be interesting without tiring out your tastebuds. It does great things to a tumbler of eggnog. Trust me.

Tastin’ Jamaican Pumpkin Spice Salsa

“Out of stock” on Amazon and some confusion with the brand’s website prompted me to call the oh-so-lovely folks who make this Caribbean style salsa in Louisburg, North Carolina. I was promptly schooled on the brand as well as a local fondness for the pumpkin spice variation and a few days later, a jar arrived at my doorstep. Now, salsa is not something I take lightly. I eat it often and my standards are high but this was a very pleasant surprise. Smoky flavors mixed with subtle pumpkin and mild spice all made for an unusual but interesting twist.

The Good

I should probably preface by saying I’ve always been more of a Pillsbury Toaster Strudel guy but I found this pumpkin Pop-Tart palatable, all things considered. The pastry delivered on a promise of pumpkin flavor via pie-like filling, but it had enough supporting flavors, like the crusty/bready shell and creamy vanilla icing, to strike a balance. If you like Pop-Tarts and you like pumpkin, I suspect you’ll like this pumpkin Pop-Tart. That’s just math, folks.

Pumpkin Spice Frosted Flakes

This limited release made the most sense to me when considering the full lineup at hand. Let’s face it, cereal has always been a trojan horse for sugar and I was fully anticipating the glorious leftover pumpkin spice cereal milk. It was good although very sweet, of course, and to get through a full bowl would have been tough. In a perfect world maybe they’d tone down the pumpkin spice and sugar a touch, but I guess true pumpkin spice heads come to play.

The Not So Good

Land O’Lakes Pumpkin Spice Butter

Listen. I was excited as anyone would be who’d been given an excuse to eat butter, shamelessly and alone in the darkness of their apartment on a weekday evening. But life just isn’t that simple and neither was this. The butter spread had by far the most concentrated pumpkin spice flavor of anything I tried. Too strong and it crushed the unsuspecting slice of bread I’d smeared it on. It wasn’t so much the presence of pumpkin but the deep spice that proved too aggressive for my tastebuds, although I could live in a world where it’s subbed in for regular butter in a sugar cookie recipe or melted down over pancakes.

Upon opening the small canister of Blue Diamond roasted almonds, I was bludgeoned with a sharp waft of pumpkin spice. I really was hoping these would win me over but something was just…off. A little too much clove and spice and no caramelized sugary crust, as I’d secretly hoped there would be. One point for being among the healthier of the bunch but in the end these nuts are best-suited for a serious pumpkin spice addict only.

The ‘Why God, Why?’

This is billed as a “spread made with crushed cookies” so naturally I was ALL in…at first. Not that I expected a kale smoothie here but check out the ingredients, all of which are actually listed on the label: brown sugar, sugar, glucose syrup, caramel sugar syrup, invert sugar, caramel sugar water, and sugar (again, for some reason). Soooo yeah, it was va-herry sweet and also gloopy with almost no trace of this “ crushed cookie” business. Quite honestly, I’m not sure what one would use this for except lean into a deep depression.
