Friday Food Finds: Grilled Cheese & Tomato Soup Lay’s, Apple Cinnamon Cheese, Healthy Peach Rings, and More!

Can you believe that we only have one more Chub Chub Chowdown segment left in 2019 on the Taylor Strecker Show? This year has flown by faster than the first fleet of Popeyes’ spicy chicken sandwiches that debuted in August, which is, like, Usain Bolt-levels of fast. Needless to say, we’re obviously super excited to announce our Top 10 Friday Food Finds of 2019. Do you think any of the products below stand a chance? You’ll find out soon enough! In the meantime, try everything for yourself and share your favorites.

Fat Snax Keto Cookies

Unfortunately, these were a miss for the bunch. The texture was a bit grainy and the stevia is overwhelmingly present with each bite. That being said, they are a good sweet indulgence for anyone who is strictly (and I mean strictly) following a diet. (Though we’re not entirely sure dieters, even those who are keto, will want to grab anything with “fat” in its name. There was a mixed marketing opportunity by not calling these “Phat.”)

Smart Sweets Peach Rings

We raved about the gummy bears last year, but Smart Sweets has outdone itself with these tangy peach rings. The texture is addictively delicious, but we’re most impressed with the low sugar content and whoppingly high amount of fiber. You’ll need to monitor that last one, though, because at 28 grams per serving, these may send you straight to the bathroom instead of back to the kitchen. Not that we know from personal experience or anything. Either way, these are perfect for the candy-obsessed who are looking for a lifestyle change.

Grilled Cheese & Tomato Soup Lay’s

Something is entirely off with my palate today because all I can taste is cheddar cheese. Taylor and Jessie, on the other hand, experienced Willy Wonka-levels of flavor metamorphosis, with the chip changing from cheesy sandwich to tomato soup goodness as they chewed. Overall, this is a solid Lay’s iteration that we want to serve on the side of a sandwich and soup combo because we’re meta like that.

Apple Cinnamon Boursin

It’s pretty difficult for Boursin to mess things up, so it’s no surprise that their seasonal Apple Cinnamon variety is a hit. It’s not too sweet, which makes it a perfect cracker topper or dip base for all of your holiday get-togethers. We’d also love to top it with apple butter because all we want for Christmas is more apples on everything. Did you hear that, Mariah? Let’s get that remix going.

KIND Simple Crunch (Oats & Honey)

It’s very apparent that KIND is coming hard for Nature Valley’s famous crunchy granola bars, but did they deliver? Our response was a resounding “meh.” While they’re certainly less messy, we don’t get the same texture play as the OG. Plus, they seem to lack some of the salt that balances the oats and honey oh-so-nicely. Your kids will like these, though, so if you have a commitment to their touted “no genetically engineered ingredients,” these are the bars for you.

Ozery Bakery Lavash Crackers (Organic Apple & Quinoa)

We liked ’em! Are they the best crackers we’ve ever tried? Certainly not, but their ultra-thin shape is what separates them from competition, making them a perfect vessel for literally any type of sauce, dip, cheese, or condiment. This apple and quinoa variety is also unique, giving the cracker a slightly sweet bite that contrasts nicely with the sesame seeds. Definitely worth a try for anyone who craves a crunch, which is basically everyone (unless you have no teeth).

Ojas Studio Date & Grain Bites (Ginger, Cinnamon & Chai)

Hmm. These were perplexing because while we appreciated the fact that they’re essentially soft grain bars in bite form, the taste didn’t blow us away. In fact, they were so date-heavy that we didn’t really get too much of the ginger or cinnamon notes (The chia seed crunch was nice, though!). Our verdict is that they’re great for anyone on the go, but won’t satisfy the cravings of those who are in the office on a Friday afternoon, ravenous, and needing to partake in a snack binge.

Petal Original Rose Sparkling Botanical Blend

It’s interesting to see that rose-flavored anything is a brand’s “original” flavor, because the taste can be quite polarizing. Taylor felt like she was sipping perfume, Jessie said the drink made her instantly rich, and I wanted to pair it with alcohol and cut the flower with some sort of citrus note. I guess this shows off the drink’s versatility? We’ll have to sip on some of the other flavor varieties before settling on a final verdict.

How to Brine a Turkey & Why You Should

There are lots of ways to cook your Thanksgiving turkey: smoke it, fry it, spatchcock it. But a traditional roast turkey is probably the most common option—and perfectly delicious when you do it right. For the best Thanksgiving turkey, you should be brining your bird.

So here’s how to brine turkey (and why you should), including both wet brine and dry brine options.

First Off, What Exactly Is Brining?

Simply put, it’s letting something soak in a salted solution (usually with sugar and other seasonings, though specific ingredients vary) for at least several hours to allow the mixture to penetrate the meat. (Brining is usually done to meat, but the technique can be applied to, say, tofu—and, of course, pickles are brined.)

And What’s the Point of Brining?

When it comes to meat, brining flavors it far more deeply than a mere surface sprinkling of salt and spices can, and also ensures a juicy, tender texture (as long as you don’t egregiously overcook the bird or other protein—or leave the meat in the brine too long).

So, Should You Brine a Turkey?

Yes! You can turn out a fine roast turkey without brining (as long as you season it well and baste it or drape it with butter-soaked cheesecloth—or bacon—for most of the cook time), but a brined turkey is widely considered best, both in terms of flavor and texture.

Brining turkey will benefit it even if you’re not roasting but are grilling, smoking, or frying it instead. That is, if you brine it correctly—not too long, and not with too much salt. More on that below.

How Do You Brine a Turkey?

You have two options: wet brine or dry brine. A wet brine is the classic method, but it does require a bit more work, and enough space to store not only the bird but the gallons of liquid it’ll be chilling in.

Whichever method you choose, be sure you’ve completely defrosted the turkey first. Also, remove the giblets and neck from the thawed turkey. (Save the neck for gravy, and the giblets for stuffing if you’re a fan; if you’d rather pass, at least cook them up for your cat or dog if you have one.)

How to Wet Brine a Turkey

We got pointers on this method from chef, vintner, and TV host Michael Chiarello:

  • Make sure your container is large enough to hold the bird completely immersed in the brine. You can use a large cooler to do this, or your fridge’s crisper drawer.   • Don’t use too much salt in the brine, as it will have the opposite effect you’re going for and make the turkey stringy and dry.
  • Don’t leave the turkey in the brine too long, or it will not only dry out, but be inedibly salty. We recommend anywhere between eight and 16 hours, max (but the smaller the turkey, the less amount of time it will need).
  • Feel free to play around with the specific spices and herbs in your brine. In our basic Brined Turkey recipe, we use kosher salt, brown sugar, peppercorns, bay leaves, and some apple cider vinegar in addition to water, but if you’re doing a more adventurous turkey, you can switch it up as you see fit. For instance, use unseasoned rice wine vinegar and star anise, Sichuan pepper, ginger, garlic, and cardamom for an Asian-inspired bird (in addition to the salt and sugar called for in the original recipe); or add some oregano, cumin, and chili powder to our standard spice list to take the flavors in a Mexican direction.
  • When the turkey comes out of the brine, be sure to thoroughly pat it dry inside and out and let it sit at room temperature for a while (around an hour) before putting it in the oven; this ensures crispier skin.

How to Dry Brine a Turkey

Dry brining is by far the easier method, but still needs to be done a day ahead of time—and perhaps would be better classed as a rub instead of a brine (which by definition is a liquid).

Rather than boil up a brine solution and submerge the turkey, you simply rub a healthy dose of kosher salt (and other seasonings if you like) all over the bird, then let it sit for a day or two. The salt will work its magic and you’ll have a juicy, well seasoned bird with crisp skin. See our Dry Brined Turkey recipe for more details.

How to Cook a Brined Turkey

After patting your brined bird dry and allowing it to rest at room temperature for a little while to guard against that dreadful flabby skin, you can proceed to cook it however you like: roast it, smoke it, fry it. Brining benefits the turkey no matter which cooking method you choose.

A Note on Gravy

You may find your brined turkey pan drippings too salty for gravy. That’s easily solved by making a batch of gravy ahead of time, which we advocate for anyway, because literally no one has ever complained that there wasn’t enough gravy on the table. A Refreshing White Kimchi You’ll Adore Just as Much as the Classic

You may know Judy Joo from her Cooking Channel show Korean Food Made Simple or her cookbook of the same name. But if you’re unfamiliar with her work, you’ll want to quickly get acquainted. 

The Korean-American, London-based chef, who’s also the owner of Jinjuu in London, is on a mission to showcase just how easy it is to make beloved Korean comfort food at home—with just a few staple ingredients you probably already have stored in your pantry. Her newest cookbook, “Judy Joo’s Korean Soul Food,” is a testament to that. It’s brimming with recipes for street food, snacks, shareable dishes, and breads, coupled with tips on how to store a Korean cupboard and easy-to-follow recipes for essential sauces.

The book may be packed with classic and traditional Korean recipes—think oi muchim (chili-flecked cucumber salad) and soon dubu jiggae (seafood silken tofu soup)—but Judy has also developed recipes that pay homage to the UK, her home for the last 10 years. Woven into the cookbook you’ll find an assortment of British recipes with a Korean riff. Keep reading for a taste of Judy’s white kimchi, known as baek kimchi (one of four kimchi recipes in the book). Her version isn’t spicy; rather, it’s refreshing and somewhat sweet, anchored by chunks of Korean cabbage, grated Asian pear, white radishes, carrots, and dried jujube dates. Although it’s often eaten in the warmer months—it’s stored in the fridge as a cool, refreshing snack—it’s the kind of kimchi you’ll want to eat year-round. 

Once all of the ingredients have been packed into tightly sealed containers, the kimchi will need 2 to 3 days to rest on your counter to fully ferment. After a few days, the kimchi is ready to eat, but Judy suggests sticking it in the fridge (where it will continue to ferment) because that coldness is what makes the kimchi so refreshing. Then, simply eat as is (and enjoy its “soup”!), whisk the cabbage into scrambled eggs, or plop a mound atop your favorite rice bowl concoction.

White Kimchi Recipe

Contrary to popular belief, not all kimchi is spicy. This white version is refreshing and crisp and often eaten in the summertime. The pickling liquid is so tasty, and rather revitalizing on a hot day; you’ll often see people ‘drinking’ it by the spoonful.

White Kimchi

Makes: One 5-liter jar
Ingredients
  • 230g (8oz) sea salt
  • 1 very large Korean cabbage or several heads Chinese cabbage (2.2–2.7kg/5–6lb total weight), bottom(s) trimmed, wilted or tough outer leaves discarded, and rinsed well
  • 20g (¾oz) sweet rice flour
  • 1 large Asian pear, grated, juice and pulp reserved
  • 1 small onion, grated, juice and pulp reserved
  • 4 tsp garlic, grated or finely chopped
  • 2 tsp ginger, grated or finely chopped
  • 2½ tbsp sea salt ½ leek, cut into 5cm (2in) lengths and julienned
  • 450g (1lb) mu (Korean white radish) or mooli, peeled and julienned
  • 1 carrot, julienned
  • 1 red chili, deseeded and julienned lengthways
  • 1 green chili, deseeded and julienned lengthways
  • 30g (1oz) daechu (dried jujube dates), deseeded and julienned
  • 20g (¾oz) pine nuts
Instructions
  1. In a large bowl, stir together 2 liters (3½ pints) warm water and 115g (4oz) of the salt until it has dissolved; leave it to cool. Meanwhile, partially cut the cabbage in half lengthways, starting from the root end and cutting about halfway to the top. Pull the cabbage apart to split in half completely. Repeat, keeping the leaves intact and whole.
  2. Loosen the leaves of each wedge. Sprinkle the remaining 115g (4oz) salt over and between all the leaves, salting the core area heavily. Put the cabbage in a large bowl (use two if they don’t fit) cut-side up. Pour the salted water over the cabbage, then add cold water to cover the cabbage; don’t overfill the bowl. Weigh it down with a plate. Leave at room temperature for 6–8 hours, flipping the wedges halfway through.
  3. Rinse the wedges well under cold running water and gently squeeze out any excess moisture. Put the cabbage cut-side down, in a colander and leave to drain for at least 30 minutes.
  4. Meanwhile, make a starch paste. In a small saucepan, stir together 200ml (7fl oz) water and the sweet rice flour. Cook over a medium heat, stirring frequently, for about 4–5 minutes until it thickens and starts to bubble. Transfer the mixture to a bowl and leave to cool.
  5. In a separate bowl, stir together 80g (3oz) of the starch paste with all of the kimchi paste ingredients. Rub the paste over the wedges and between each leaf. Pull the outer leaf of each wedge tightly over the rest of it, to form a tidy parcel. Pack into a container with a tight-fitting lid and press down well to avoid air pockets. Add 250ml (8fl oz) water to the bowl used for the paste, then pour into the kimchi container. Press a piece of clingfilm on to the surface of the kimchi, then cover. The kimchi can be eaten at this stage, or leave it to sit at room temperature for about 2–3 days until it starts to sour and 'bubble'.
  6. Store the kimchi in the fridge, where it will continue to ferment at a slower pace. Cut the kimchi before serving.
