How to Bake with Coffee Flour

If you’re one caffeine withdrawal away from sticking a permanent IV of coffee into your veins, don’t fret. We’ve found a new way for you to get over that mid-afternoon slump with cookies, and brownies, and cakes, oh my!

Meet coffee flour: the latest flour alternative that can make all your favorite baked goods just a little bit healthier.

What is coffee flour?

The once discarded fruit or “cherry” that surrounds a coffee bean. It is dried and milled into a consistency that resembles cocoa powder and can be used as a replacement flour in baking and cooking. Typically, coffee flour should replace ten to 20 percent of the flour you’re planning to use and not used entirely by itself. What makes coffee flour even more special is its sustainability. It was once considered a waste and is now a superfood! A reminder to dream big, folks.

Does coffee flour actually taste like coffee?

No. In fact, it has more of a floral and citrusy taste when baked. The actual coffee bean isn’t utilized, so don’t expect latte-flavored everything (though that would be amazing).

What are coffee flour’s health benefits?

When it comes to vitamins and nutrients, coffee flour packs a huge punch. It boasts heavy iron and potassium content, while surpassing the amount of protein found in a single serving of kale. Additionally, it is jam-packed with antioxidants, fiber, and is naturally gluten-free.

How much caffeine is actually in coffee flour?

Not as much as you think, but a significant amount. One serving size is comparable to a piece of dark chocolate.

Ready to take your coffee addiction to the next level? Try one of these four recipes that highlight the unique ingredient.

How to Make Zucchini Boats

Summer is here and the time is right to go overboard with summer squash recipes! One of my go-to summer meals is the zucchini boat, which can best be described as a sort of “flatbread” with a long slice of zucchini standing in for crust.

If you’re unfamiliar with zucchini boats, let me tell you why they are dreamboats:

  1. They’re easy to make and almost couldn’t require any less preparation.

  2. Many variations are low carb and/or gluten free.

  3. Unlike a real boat, zucchini boats are extremely budget-friendly.

  4. They’re completely customizable. You can top your zucchini base with any fixin’s that float your boat (see what I did there?!).

  5. They’re scalable. Pop one in the oven for yourself or prep a full fleet for a crowd!

Now that you know the ropes, here are 10 recipes to get you started. Here’s hoping it’s smooth sailing!

1. Parmesan Herb Boats

Agnese Italian Recipes

Let’s start simple. This first boat resembles garlic bread, but with zucchini subbing in for the bread. For some extra zest and texture, add sliced tomatoes on top. A close cousin to this recipe uses mozzarella in place of Parmesan. While this changes the flavor game, I recommend waiting to add the mozzarella until the last five minutes of oven time so that its melty gooey-ness doesn’t get too out of control. Get the recipe.

2. Spinach Artichoke Boats

Eat Drink Love

For another appetizer option, these boats serve up all the deliciousness of spinach and artichoke dip sans chips and their accompanying carbohydrates. Get the recipe.

3. White Pizza Boats

Kitchen Treaty

Armed with tomatoes, cheese, and any toppings you desire, it’s easy enough to improvise a simple red pizza atop your zucchini.  But if you’re interested in trying your hand at a white pizza, check out this recipe, which calls for stuffing your zucchini with ricotta, mozzarella, garlic, and a blend of spices. Get the recipe.

4. Buffalo Chicken Boats

The Wholesome Dish

Ground chicken and zucchini are the new peanut butter and chocolate — there are endless ways to combine this delicious duo. To get you started, here’s a recipe that only requires four ingredients: zucchini, chicken, wing sauce, and mozzarella cheese. Or for more of a “chicken parm” variation, swap the wing sauce for pasta sauce and garlic. Get the recipe.

5. Lentil Stuffed Boats

Little Spice Jar

Lentils can catch a ride with pasta sauce on a zucchini boat too! Along with lentils, this Italian-inspired recipe fills your boat with onions, spinach, and mozzarella. Get the recipe.

6. Turkey, Veggie, and Feta Boats

Its Yummi

Using ground turkey is another easy way to add some protein to your boat. This recipe involves sautéing turkey with onions, mushrooms, and peppers before garnishing with feta cheese. Get the recipe.

7. Greek Quinoa Boats

Kristine’s Kitchen Blog

Before we sail on from the flavors of the Greek isles, here’s a protein-packed vegetarian option that calls for quinoa mixed with olives, tomatoes, and feta. Get the recipe.

8. Mexican Burrito Boats

Making Thyme For Health

As you can infer from the name, this recipe casts a zucchini in the role usually played by a tortilla. Move over, Chipotle! Get the recipe.

9. Philly Cheesesteak Boats

Low Carb Yum

Grab some roast beef, veggies, and provolone and savor the flavors of Philly without the calories of a hoagie roll! Get the recipe.

10. Thai Tempeh Boats with Peanut Sauce

Eat Gold

Now we’re getting fancy. Since this recipe requires the additional step of preparing a sauce, it’s a bit more labor intensive. But I imagine that the commingling flavors of peanut, sesame, chili, coriander, garlic, and ginger will reward you for your efforts. Get the recipe.

Old-Fashioned Peach Pie

Peach Pie

I could wax on and on about my love for pie. The flake of the crust, the sweet filling, that sparkle of sugar on the crust — but I’ll spare you.

Peach pie is right up there on my list of favorite things to make and eat. One of my very first memories is of riding my grandfather’s shoulders, picking peaches right off the trees in a California orchard, taking that first bite, and letting the juices flow down my arm.

This is the memory of summer for me, and peach pie is a recipe I think every baker should have in their recipe box.

Your Uber May Be Getting a Vending Machine

Your 3 AM trip home from the club just got a lot more comfortable.

Transportation service Uber has teamed up with Cargo, a tech startup that supplies rideshare drivers with seat-side vending machines. The in-car contraption (and tell-tale sign that the future has, indeed, arrived) allows passengers to purchase anything from chips and energy drinks to over-the-counter medicine and USB cords. Some vehicles even contain freebies like Cheez-Its and Blowfish hangover tablets (#necessary).

To participate, drivers can request their free display case from Cargo’s website. If customers are en route and see something they like, they simply log on to Cargo’s rider page, type in the vehicle’s unique code number, and order the product. The service conveniently accepts credit cards and mobile payments.

While noshing on snacks and listening to a custom playlist (already an Uber luxury) sounds like a drunken rideshare dream, the driver also benefits from your purchases. Those who partner with Cargo will receive 50 cents for each sale, in addition to the reputation of being the best Uber driver around town. And since those 5 star ratings matter more than ever now,

Unfortunately for most of the country, the service only operates in New York, Chicago, and Boston, but it looks like the company has plans to expand nationwide. Requests have been received from all 50 states and the team has raised nearly $1.75 million in funding.

We don’t want to do all of the work for them, but here are some early requests for future Cargo box components: a mini bar and cocktail mixing kit (perfect for pre-gaming), disposable flats (so ladies can kick off their stilettos), chewing gum, mini perfume and cologne samples, hand sanitizer, oil blotting sheets, funky sunglasses, a city restaurant guide, book of crossword puzzles and Sudoku, lottery tickets, bottled water, and double-stuffed Oreos (because duh).

Ultra-Tropical Piña Colada

Ultra-Tropical Piña Colada
A good piña colada should instantly transport you to warm sandy beaches and turquoise waters. What we don't want is a drink that tastes weak and watery, nor artificially tropical, as if someone dumped a bottle of tanning oil into the blender. This version produces a slushy frozen cocktail full of ripe pineapple and rich coconut flavor. Plus a good, strong hit of rum. Get Recipe!

20 Degrees of Flavor: Chocolate and Vanilla

Chocolate and vanilla both grow about 20° from the equator, relying on rainforests to thrive. While chocolate comes from a pod grown on the Theobroma cacao tree, vanilla is derived from the pods of the only fruit-bearing Vanilla planifolia orchid.
