Eat Long and Prosper with this ‘Star Trek’-Inspired Menu

You don’t have to climb aboard the USS Enterprise to experience a food tour that’s out of this world. In fact, most of space’s drool-worthy (and downright repulsive) dishes can be replicated right here on planet Earth. In celebration of CBS All Access’s Star Trek: Discovery premiere on Sunday, September 24, we’ve rounded up some of our favorite cuisine from the show and accompanied it with quick, easy-to-make recipes. From booze and stews to bread and berries, no Star Trek delicacy has been left unturned. So brew a cup of tea…Early Grey…hot…and get scrolling.

What Is the Difference Between Canned and Carton Coconut Milk?

canned coconut milk and carton coconut milk

Coconut milk, whether canned or boxed, has become a mainstream staple in the American pantry. Easy to pull out of the cabinet, this ingredient magically transforms basic recipes into exotic meals with unique depths of flavor. From Asian-inspired curries to Island-style coconut rice, coconut milk is used in many recipes around the world to use the complete coconut as an ingredient. Coconut milk comes in a few different forms, mainly canned and tetra-packed, so how do you know which one is best to use for your recipe? Read on for more about the differences between canned and boxed coconut milk.

Canned Coconut Milk

Canned coconut milk comes in two main varieties: lite and full-fat. Each type has a different ratio of fat-to-water content, lite containing the most water. Before opening the cans, coconut milk should be shaken due to natural separation. In order to properly blend the product before using, a vigorous shake should do the trick.

Canned coconut milk also comes in the form of coconut cream with 100% fat content. Coconut cream is typically used in desserts or other high-fat recipes. Typically, if a recipe is calling for ‘coconut milk’ and does not specify, you can safely assume it means full-fat coconut milk.

Some brands add extra preservatives or stabilizers such as guar gum in order to keep the product emulsified and consistent from can to can. To some, these preservatives can cause digestive issues, and to others BPA used in some canning processes is another concern.

Boxed Coconut Milk

Containing too much water to hold any real texture for cooking purposes, boxed coconut milk has more benefits as a beverage. Coconut milk in its natural state has a high fat content—it’s not necessarily something you should be drinking. Boxed milk (also known as coconut beverage) dilutes coconut milk into a drinkable state, ideal for eating with cereal or adding smoothies. The plain milk has a similar taste to regular cow’s milk, but with a distinct coconut flavor.

Located in either the dairy department or shelf stable milk section, boxed coconut milk is typically used as an alternative to traditional milk, offering a no-sugar and lactose-free alternative that is plant based. Take a careful look at the ingredients as these products often contain hidden additives. Be sure to go for ‘unsweetened, plain’ flavors to avoid extra sugars that you might not be looking for.

Some coconut cream and culinary coconut milk products are beginning to show up on the market in cartons or tetra-packed boxes. Be sure to check ingredients to make sure that they are pure coconut milk and suitable for cooking purposes.

The End of Summer Isn’t So Bad with Fall-Flavored Ice Cream

What Are Apple Cider Doughnuts And Why Do They Taste So Good?

baked greek yogurt apple cider donuts

Before pumpkins swooped in and stole the show, apples were the go-to fall treat. The season wasn’t complete without an apple picking trip or a mug of hot cider on a cold night. Now, it feels like the fruit has become second fiddle.

But apple cider doughnuts just might make you forget about your pumpkin spice craze, if only briefly. (Though let’s be honest: There’s plenty of room for both this autumn). Anything fried is going to be delicious, so once you infuse apple cider and ground cinnamon into your batch, the doughnuts will treat your taste buds to a fall festival. Of course, a generous helping of butter also does the trick.

For those lucky New York residents, the Carpe Donut truck makes its way from location to location in its red van, handing out the scrumptious treat (with some organic ice cream from Blue Marble to top it all off). It’s a fantastic surprise seeing it parked on your block,
and it’s incredibly difficult to pass up. But if you’re not in the Big Apple (see what I did there?) and you’re thinking about switching up your autumn sweets, try these takes on the apple cider doughnut.

Apple Cider Doughnut Muffins

Boston Girl Bakes

As if apple cider doughnuts weren’t inventive enough, the genius behind the Boston Girl Bakes blog offers hungry readers a muffin version of the autumn treat. Obviously, this little tweak to the snack makes it a perfect dessert or breakfast option. Heather, the creator of the blog, dips the muffins into melted butter and rolls them in cinnamon and sugar. How sweet can you get? Get the recipe.

Greek Yogurt Apple Cider Doughnuts

Handmade Is Better

These fall favorites get a bit of oomph thanks to the recipe featured in the Handmade Is Better blog. This take on the treat calls for a Greek yogurt glaze in addition to the apple cider and cinnamon. A bit of maple syrup is not required, but highly encouraged. Get the recipe.

New England Apple Cider Doughnut Bread

Kenarry

Carrie, the blogger behind Kenarry, serves up carb-induced coma with a touch of apple…and we’re not complaining. She teams up with Robin from A Home To Grow Old In to present us with a loaf of the out-of- this-world bread. The bread is sprinkled with white sugar and includes a hint of nutmeg. You’re going to want a warm drink when you have a slice of this. Get the recipe.

Apple Cider Fritters

SugarHero

When we caught a recipe for Apple Cider Fritters on a blog titled “Sugar Hero,” you better believe we perked up. These bad boys feature anything and everything one could possibly want with this dessert: apples (so you’re kind of, sort of being healthy, though not really) nutmeg, cinnamon, brown sugar, powdered sugar — the works. It’s complete with an apple cider glaze concentrate, really adding to the sweetness. You’ll spend plenty of time in the kitchen, but it’ll be so worth it. Get the recipe.

Apple Cider Hushpuppies

The Cozy Apron

Oh sorry, what did you say? I was too busy dumping my Apple Cider Hushpuppies in a bowl of maple syrup. The Granny Smith Apple dessert actually does have a hint of pumpkin pie spice — ½ teaspoon to be exact, so you’ll get the best of both fall treats with this. The creative genius behind The Cozy Apron knows the way to our autumn-loving hearts. Get the recipe.

Apple Cider Doughnuts With Maple Cream Frosting

Simple Roots Wellness

Friday Food Finds: Algae Lemonade, Kalamata Chocolate, Banana Almond Butter, and More!

We’re crying over the end of summer, but not over the influx of fall-flavored food products! And no, we’re not talking about the ever-so-notorious pumpkin spice. Your grocery store is well-stocked with options that go beyond the most basic of seasonal tastes.

To kick off the weekend and the arrival of cooler temperatures (JK – it’s still over 80 degrees in NYC), we sampled a handful of new and limited edition finds on SiriusXM’s Wake Up with Taylor. All in all, it was a huge success. Scroll down to check them out!

Cassava Crunch Yuca Root Chips

If you’re looking for a grain-free alternative to your everyday cracker, look no further than the beloved yuca root. This versatile tuber lends itself to fries, steamed side dishes, as well as a buttery, mashed variety, but this time, it’s getting the dipping vessel treatment. Cassava Crunch‘s beet and goat cheese flavor is superb, but hummus would make it even better.

Daily Greens Green Lemonade

We’re not sure why Taylor has an aversion (or allergy!) to stevia, but we think it’s the best all-natural sugar alternative you can find. Daily Greens is an incredible company with a commitment to nutritious cold-pressed juices and lemonades. The Green Lemonade’s tartness and spice makes it a clear winner, especially for those who can’t let go of the tastes and smells of summer.

Brooklyn Crafted Extra Spicy Sugar Free Ginger Beer

We love ourselves some unfiltered, spicy ginger beer, but we don’t love ourselves some sugar. Luckily for us, Brooklyn Crafted has created a sugar free, stevia-sweetened (sorry, Taylor!) alternative to one of their bestsellers, which makes this bev a hit. In fact, we’re totally planning to shake up some Moscow Mules during tonight’s happy hour. And we’re definitely using this stuff.

MaraNatha Banana Peanut Butter

MaraNatha has certainly made its mark on the nut better scene (and not just because of their hilarious commercials.). Aside from the introduction of no sugar, no sodium-added almond and peanut butters, we were particularly excited about the company’s flavored spreads that—in line with their slogan— truly don’t need jam. The velvety-smooth banana peanut butter was no exception. Long gone are the days of finding a perfect banana and dousing it in peanut butter. We’d eat this straight from the jar.

ChocoCurb Chocolate Subscription Box (Chocolat Moderne)

We may have found our new favorite subscription box. ChocoCurb introduces its subscribers to the most unique, delicious, gourmet chocolate concoctions from around the country. Today we sample caramel bars from Chocolat Moderne and they were not only beautiful to look at, but tasted fantastic! We particularly enjoyed the dark chocolate option with kalamata olives and olive oil. It may sound peculiar, but the early morning indulgence was the perfect balance between sweet and salty. Yum!

Zucchini Ricotta Frittata

Did you know that yesterday was “Dump Your Extra Zucchini On Your Neighbor’s Doorstep Day”?

According to our local newspaper it was, though I think they may have been joshing. Then again, maybe not!

This excellent zucchini ricotta frittata recipe (like the way that just rolls of one’s tongue? “ricotta frittata, ricotta frittata”) is based on one by our local cherished chef Biba.

It’s a cinch to make and a tasty way of enjoying bountiful summer squash.
