Intuitive Eating Is a Gentler Approach to Healthy Habits

What is intuitive eating?

Eating intuitively and honoring cravings could be the key to healthier eating habits—and while losing weight isn’t the point, it could still be a side effect. So what exactly is intuitive eating all about?

Diets Don’t Work

I’ve been a yo-yo dieter for over 20 years. I was on the Atkins diet by the time I was in the third grade (which absolutely makes me cringe now). Weight Watchers, Nutrisystem, South Beach, Whole30, the cabbage soup diet, the master cleanse, paleo—like I said, I’ve been stuck on this dieting treadmill for as long as I can remember.

That is, until just a couple years ago when I discovered “intuitive eating,” a nutritional ideology that encourages one to embrace his or her natural hunger cues and completely forego diet culture (because as many people, including experts, attest: diets don’t work).

I’m sure many of you probably just scoffed, snickered, and/or widened your eyes, because that’s what I did when I first heard of the principles of intuitive eating. Last year after another unsuccessful Weight Watchers run, I simultaneously began a podcast about working out, and my co-host, who is also a Licensed Clinical Social Worker, introduced me to the the book “Health at Every Size: The Surprising Truth About Your Weight” by Dr. Linda Bacon. I’d seen references to this body positive methodology on Instagram posts accompanied by hashtags like #haes (health at every size) and #bopo. Still, I was skeptical and thought it sounded like it might be some kind of marketing ploy to repackage mindful eating, the practice of being present when sitting down to a meal.

Eventually, what I learned is that while mindful eating plays into intuitive eating some, intuitive eating principles go beyond just paying attention to raising fork to mouth. It advocates a complete retooling of what you consider to be bad or good behaviors in terms of your health. There are ten principles in all, but at its core, intuitive eating asks you to virtually unlearn an entire life’s worth of diet knowledge by understanding that weight and health are not synonymous (i.e., you may be healthy, even at a weight deemed “unhealthy” by the BMI chart, which even some health professionals are deeming ineffective).

Intuitive Eating Guidelines

The main guidelines are these: Be mindful of your hunger (that includes not ignoring hunger signals); take the time to enjoy your food; prioritize nutrient-dense foods; listen to your body’s internal cues to know when you’re full (in technical terms, when you’ve achieved satiety); don’t label foods as good or bad or can’t have, but rather note how they make you feel; when it comes to exercise, find joy in movement as opposed to focusing on how many calories you’re burning.

If you want to binge on an abnormally large amount of spaghetti, ask yourself why. Is it because you feel sad? Or stressed? Or bored? If that’s the case, intuitive eating (as opposed to emotional eating, or “eating your feelings”) tells you your body probably doesn’t need whatever it is you think you want in that moment.

Believe me, I get that it sounds like a hippie regimen birthed in the ‘60s, but intuitive eating actually first came about in 1995, when two registered dietitians, Evelyn Tribole and Elyse Resch, published “Intuitive Eating: A Revolutionary Program That Works.” Now there are psychologists, disordered eating specialists, and even nutritionists who are proponents of the anti-diet plan. There are also studies that show intuitive eating may help people make long-term health and behavioral changes while more restrictive dieting does not.

So why is intuitive eating becoming a buzzword in health and wellness circles again? Probably as a response to the large pool of restrictive, quick-results-diets we’re swimming in as of late (keto much anyone?). Not to mention, the body-positive movement that’s infiltrated the culture at large (intuitive eating is big on body acceptance).

Intuitive Eating Benefits

Not everyone is on board though. Many nutritionists believe framing weight loss as a negative objective isn’t helpful for those who should try to lose weight for particular health issues. There’s also this study, led by an associate professor of nutrition and director of the dietetics program at Texas Southern University in Houston, which suggests people who focus on calories in calories out method lost weight compared to those who actually gained or maintained their weight on the intuitive eating plan, where counting calories is not the point. (It’s worth noting she decided to do the study after a number of her friends and clients began enrolling in intuitive eating programs).

Though the point of intuitive eating isn’t weight loss per se, I’ll admit at first, I didn’t really get it. I took “listening to your hunger cues” to mean eating whatever I felt like in the moment, which is the opposite of truly honoring my hunger, my health, or my emotions. For me, however, once I really started adhering to the principles of intuitive eating, the discoveries were astounding.

When I didn’t feel any guilt after eating that piece of cheesecake or those few Doritos, I didn’t feel an itch to have more. For me, wrapping my head around intuitive eating was very hard work, and just like a diet it’s a practice. But unlike a diet, it’s a practice that leads to a more balanced relationship with food.

In terms of intuitive eating tips, I can tell you what’s been the easiest part of the diet for me, which was realizing if you listen, your body really does tell you what choices it wants you to make. McDonald’s five times a week, no veggies and mounds of scallion cream cheese just doesn’t make me feel good, as it turns out.

Usher in the Lunar New Year the Korean Way with a Bowl of Dduk Guk

Lunar New Year—a festival celebrated around the world that ushers in the new year—is often marked by devouring specific foods. In China, slurping noodles symbolizes longevity, and chowing down on dumplings is thought to bring wealth, while in Vietnam, squat squares of steamed rice cake (banh chung) are passed out, its square shape a testament to the earth and the universe.

But in Korea, the Lunar New Year always means one thing: bowls of dduk guk, a rice cake soup. It’s a brothy soup, brimming with shreds of beef, scallions, rice cakes, and ribbons of egg, and it’s a necessity to have on Lunar New Year.

“You have to have dduk guk,” Sarah Lee, the co-founder of Kimbap Lab in Williamsburg, Brooklyn, says. “You don’t need anything else [on Lunar New Year]. Just dduk guk and kimchi.”

Sarah spent an afternoon with Chowhound, walking senior video producer Guillermo Riveros through the making of dduk guk. To start, Sarah cooks a beef broth, replete with hunks of beef chuck, onions, garlic, and scallions, which is simmered for nearly two hours. Once the vegetables have been discarded and the beef is cooled, the meat is shredded and seasoned with a mix of salt, sesame oil, and minced garlic. Coin-shaped rice cakes are tossed into the broth to simmer, and then the whole soup is ready to be assembled: The rice cake-studded broth is crowned with bits of beef, strips of egg, scallions, seasoned seaweed, and chopped peppers, then served with a side of kimchi.

“It represents prosperity,” Sarah explains of serving dduk guk. “For a lot of people, this is their first meal to start off the new year.”

Although there are plenty of places that serve dduk guk, most people mark Lunar New Year with cooking the soup at home, surrounded by friends and family and working from recipes that have been passed down for generations—Sarah included. “Food is memory. So when you have that one special dish that your mom or your grandmother made, it doesn’t leave your memory,” she says. “Throughout my whole food journey, I’ve been striving to preserve that.”

Serves: 4
Ingredients
  • Beef Broth: 14-16 cups cold water
  • ½ pound beef chuck
  • 1 medium onion, peeled and halved
  • 6 cloves of garlic, peeled and smashed
  • 4 scallions white and pale green parts, (reserve dark green parts for garnish)
  • 3 tablespoons Korean soup soy sauce (Guk-ganjang), or more to taste
  • Salt and pepper to taste
  • Garnish:Cooked beef chuck removed from the broth, thinly shredded
  • 1 clove garlic, finely minced
  • 2 teaspoons sesame oil
  • Salt and pepper to taste
  • 3 eggs (use 2 yolks and one whole egg for omelette)
  • Thinly sliced scallions (from the reserved dark green parts)
  • Crumbled or thinly sliced gim (dried seasoned seaweed)
  • 4 cups sliced dduk (Korean rice cakes) (or 1 cup per person), soaked in a bowl of cold water for 20 minutes before using
Instructions
  1. Place the cold water, beef, onion, scallion ends, and garlic in a large pot, cover and bring to a gentle boil.
  2. Skim off the scum/fat that forms with a spoon or ladle, and discard.
  3. Reduce the heat to a simmer. Simmer covered for 1 ½ - 2 hours (until meat is tender enough to easily shred).
  4. Make the egg garnish: separate the yolks from the whites of two eggs. Mix a whole egg with the two yolks, and whisk until integrated fully. Heat a lightly oiled small nonstick pan over medium low heat. Pour the yolks/egg mix into a thin layer covering the surface of the pan. Cook each side lightly, do not brown the egg. Slice your omelette into thin strips.
  5. Remove the cooked meat from the broth and let cool. Shred the beef into thin strips and combine well with the minced garlic, sesame oil, salt, and pepper to taste.
  6. Slice the scallion diagonally into thin strips.
  7. Slice your gim (roasted dried seaweed) into thin strips, or crumble into pieces using your hands.
  8. Remove the vegetables from the broth and discard.
  9. Return the broth to a boil. Stir in soup soy sauce, salt, and pepper to taste. If cooking for less than 4 people, scoop out some broth into a smaller pot to cook your rice cakes and save the rest of the broth for later. You do this because the rice cakes tend to release starches into the broth. Freeze any leftover broth.
  10. Drain the soaked rice cake slices and boil in the broth until soft (not mushy) about 2-4 minutes, or until they rise to the top (you can check the texture at this point).
  11. Ladle the hot soup into individual bowls and garnish with some of the seasoned shredded beef, egg yolk strips, sliced scallions, and gim strips.

A ‘Top Chef’s’ Favorite Tool Is Actually a Camping Necessity

Whole foods refer to foods with a single-item ingredient list such as olive oil, chicken, broccoli, etc. The opposite of whole foods are processed foods, typically packaged or convenience goods whose ingredient lists venture into the dozens and inevitably wander into chemistry class territory.

Use a high-quality olive oil for salads or to finish dishes, which, according to Ciavarella, “has a more robust taste than simple extra virgin olive oil and you can drizzle it on top of anything to give it a kick of flavor.”

Before any cooking, or even any food shopping, begins for your new, healthy approach, first you must create a space that makes it easy for you to show up every day, excited and ready to cook.

Catalog a few easy meals that you love, and always keep those staples on hand, for those especially tough nights when time and energy are limited: “I recommend having a few 30-minute meals on hand for those days where you are less interested in cooking but want a nutritious meal,” says Ciavarella.

Planning your meals in advance also makes it easier to stick to buying whole foods and wholesome ingredients when faced with aisles upon aisles of convenience foods at the grocery store.

6. Make Time to Cook and Prep

“For pasta, switch from regular noodles to chickpea or lentil based pasta. If you love sandwiches, make lettuce wraps instead of using bread. Love burgers? Great! Get a burger without the bun and cheese and instead of ketchup and mayo opt for mustard.”

8. Choose Your Favorite Cooking Methods

Gone are the days when healthy cooking was synonymous only with steaming, poaching and the absence of fat. “Healthy fats are key to feeling full and staying full,” reminds Ciavarella. “Healthy fats include: olive oil, avocados, cashews, almonds, chia seeds, pumpkin seeds, coconut oil, and ghee.”

As for cooking methods, steaming and poaching still have their moments, but high heat methods such as roasting, and low and slow methods such as braising are natural ways to get the most flavor out of your raw ingredients.

“Roasting vegetables is a game changer and requires minimal effort,” explains Ciavarella. “It makes a vegetable crispy and crunchy while maintaining the deliciousness of the vegetable itself. Braising is a longer process, but braising meat for hours brings a lot of flavor without adding anything. Tossing vegetables into the braising liquid also gives bland vegetables a ton of flavor.”

9. Use Your Tools

Quality kitchen tools can make cooking at home easier and more enjoyable. If you are just starting out and don’t have any essentials, start with these:

Those basic but very versatile kitchen tools will get you far, allowing you to cook most meals at home. If you’ve got those covered, consider investing in more sophisticated appliances. If you’ve been sleeping on the Instant Pot but are committed to a future of healthy cooking, now might be the perfect time to acquire one.

“For example,” continues Ciavarella, “I put a whole chicken in my Instant Pot  for an hour and once the machine beeps and the pressure releases, I have a fully cooked chicken that I can use to meal prep with all week! Then I use the bones to make bone broth also using the InstantPot!” In short, with an InstantPot, you get more of a “cook once, eat all week” regime.

“I also love my food processor,” explains Ciavarella, “because it helps me make sauces and spreads quickly and easily.” Bright vegetable and herb spreads and sauces such as chimichurri, romesco, and caponata are great ways to add pizzazz to simple proteins and vegetables.

Even small tools like a Microplane are great for adding citrus zest, fresh spices, boiled egg, or even a modest dose of a hard cheese for a pop of flavor.

10. Get Inspired


At the end of the cooking process, you have to want to eat what you’ve made, otherwise you’ll give up on your healthy cooking routine before you’ve had adequate time to develop good habits. Don’t fall in a trap of preparing something you’re not excited about just because you know it’s good for you. That’s a recipe for having leftovers languish in your fridge while you opt for takeout.

Loving your new healthy cooking lifestyle is easy if you enjoy both the cooking process and the resulting meal. Since nothing is off limits if you approach it with a healthy mindset and these tips in mind, begin by brainstorming your favorite meals, and thinking of ways to make them healthier: whether by swapping out a less healthy component for a healthier one, approaching it with a different cooking process, or loading it up with vegetables and healthy fats.

Social media can also be a boon for the healthy home cook. Find food blogs and Instagram accounts whose recipes and photos get you excited to try them at home. And then post your own photos of your amazing meals. A little validation can go a long way toward the development of good routines!
