What Are Canelés?

What are caneles?

What are canelés? Well, to start with, they “deserve to be known and discovered,” says Céline Legros of Canelé by Céline.

While we have been busy chasing other Instagram-famous pastries such as cronuts, rainbow bagels, and all manner of über-precious, unicorn-themed treats, a humbler, worthier pastry has been flying under the radar, quietly dazzling those who inherently understand the value of substance over style.

If I told you that the custardy, caramelized offspring of a crème brûlée was both portable and appropriate for breakfast (even while spiked with rum), you’d think this would inspire the same kind of frenzy that causes diehard confectionary aficionados to make pilgrimages, if not overnight camp-outs. And yet the humble canelé is often readily available, sharing counter space with the same kind of pastry legends that require advance reservations and sometimes their own websites.

Legros has been part of the movement to bring this beloved pastry to the U.S., opening her catering and direct-order business in 2009. With many of the prominent New York bakeries such as Dominique Ansel, Bouchon, and Balthazar now offering canelés, she is pleased that they are starting to gain traction. “I remember at the beginning having to explain what a canelé is,” she laughs, “and now more people know exactly what it is.”

Canelés are daughters of Bordeaux, a region famous for its baller, stately wines and their corresponding châteaux. Legros hails from La Rochelle, just north of Bordeaux. “What I like the most is that they have very simple ingredients—not complicated, very basic.” They are made from an egg-based, crepe-like batter, and cooked in fluted, buttered molds for a rich, chewy crust and an interior that remains creamy yet spongy.

“They are very caramelized,” explains Legros. “They look burnt, but they aren’t burnt. They are very crispy, but on the inside are very creamy. There’s a contrast of texture. It’s interesting to watch when people get the crunch followed by the flan-like vanilla inside. It’s almost a surprise.” The traditional flavor is vanilla, but Legros offers several other options at Canelé by Céline including sweet flavors such as Nutella, pistachio, and orange blossom, and even some savory options such as parmesan, pesto, and black truffle. These latter options she describes as between a “quiche and a gougére, with a very refined taste.”

Unlike their showier pastry brethren, the canelé is all but innocuous behind the glass, with only its trademark fluted dome shape to make its case for the intrepid pastry consumer. To Legros they have an “elegant, old style appeal.” But it rewards those who would not be swayed by more bedazzled items. Flecked with vanilla bean and lightly spiked with dark rum, it is a poised, petite confection that is as appropriate with morning coffee as it is with a glass of its sister wine for an after-dinner treat.

And the best part is, due to their petite, simple nature, “if you have one and you really want another one, you can get another.”

“Chia seeds can help to control hunger by expanding in your belly and keeping you full,” says Nicolette Pace, a dietician, chef, and nutritionist. “They are also packed with fiber, antioxidants, and omega-3 [fatty acids].” Per Diana Stobo, creator of Truth Bar, chia “is also considered a perfect protein with all 9 amino acids in its profile. That makes chia a great vegan option for those looking to get enough protein in their diet.”

Chia Hummus with Sun-Dried Tomatoes and Za’atar

Chia and Middle Eastern herbs give an otherwise standard hummus recipe texture and an interesting pop of flavor in this Mamma Chia-created recipe.

Ingredients:

  • 1/4 cup white chia seeds
  • 3/4 cup plus 1/4 cup purified water
  • 3 tablespoons freshly squeezed lemon juice (from about 1 lemon)
  • 8 sun-dried tomatoes (not oil-packed)
  • 1 (15-ounce) can chickpeas, drained
  • 1/4 cup tahini
  • 1 1/2 teaspoons dried za’atar or chopped fresh thyme leaves
  • 2 large cloves garlic, peeled and chopped
  • 1/2 teaspoon sea salt
  • 1 tablespoon extra-virgin olive oil

Instructions:

  1. In a liquid measuring cup or small bowl, whisk together the chia seeds, 3/4 cup water, and the lemon juice and let stand for about 20 minutes. (Makes 1 1/8 cups lemon-chia gel.)
  2. Bring 1/4 cup water to a simmer.
  3. Place the sun-dried tomatoes in a coffee mug or small heatproof bowl and add the water. Let stand for about 20 minutes. Place the lemon-chia gel, sun-dried tomatoes with water, chickpeas, tahini, za’atar, garlic, and salt in a food processor or blender. Cover and puree.
  4. Taste and adjust seasonings. Chill until ready to serve.
  5. To serve, spoon into a serving bowl and drizzle with olive oil. Or cover and store in the refrigerator for up to 1 week. Makes 2 3/4 cups.

“Chia is a cornerstone in all my sweet treats—I use it as a binder in my cookies, granolas, and cakes, and I also love making a variety of chia puddings,” says Truth Bar creator Diana Stobo.

Ingredients:

  • 2 cups almond meal
  • 1/2 cup chia seeds, ground (measure before grinding)
  • 16 ounces sweetened raw cacao nibs
  • 1 cup almonds, chopped
  • 2 cups raw oat groats (soaked in water for 12 hours)
  • 2 cups coconut palm sugar
  • 2/3 cup coconut oil (melted in hot water)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla powder
  • 1 teaspoon sea salt

Instructions:

  1. Mix first four ingredients together in a large bowl and set aside. In food processor fitted with s-blade, mix raw oat groats, coconut sugar, cinnamon, vanilla powder, and salt while slowly adding melted coconut oil. Process until creamy and smooth (there will still be texture from the oats).
  2. Pour mixture over dry ingredients and mix thoroughly with thick spoon or spatula. Let set 5 minutes for batter to thicken.
  3. Using a 11/8-inch cookie scoop, form heaping half domes of batter onto dehydrator trays lined with grid sheet and non-stick silicone sheets (like Paraflexx; if you have a round dehydrator, you can find 12-inch round silicone sheets that should fit). Dehydrate at 145 degrees for 2 hours. Reduce heat to 115 degrees and dehydrate for 4 hours.
  4. Gently remove cookies from silicone sheets and place directly onto grid sheet. Dehydrate at 115 degrees for an additional 12 hours.
  5. Place in airtight container (may refrigerate). Keep up to 1 month.
  6. Makes 50+ cookies.

  • dried papaya (small dice)

Instructions:

  1. Warm the coconut milk with the maple syrup over medium heat until it comes to a gentle boil.
  2. Whisk in the maca, chia, dried fruit, and banana to the coconut milk. Stir at the beginning and midway through soaking to break up any clumps. Reduce the heat to simmer and stir over low heat until porridge thickens.
  3. Rectify dish with salt accordingly.
  4. Pour into a bowl and top with hemp seeds, passion fruit, and mixed berries.

  2. Garnish with fruits of your choice (from dragon fruit to berries).
  3. If it is too thick in the morning, just add a bit more almond milk.

Why the Fyre Festival Docs Should Lead to Cheese Sandwich Redemption

Anyone who’s seen the Netflix documentary on the Fyre Festival (or the one on Hulu—yes, there are two!) knows one of the most compelling characters to emerge out of the chaotic mess was a certain poorly constructed “cheese sandwich.” Neither cheese nor sandwich, this anti-hero was really more of a pathetic slice of cheese product tossed haphazardly onto a couple pieces of sad white bread strewn about in a polystyrene foam container next to undressed salad.

Eventually we learn the unintended mascot of the Fyre Festival was first tweeted by Fyre Festival attendee Trevor DeHaas and came to symbolize everything that went wrong with with the disastrous music fest, where concertgoers paid hundreds, and in some cases thousands, of dollars to party with bikini-clad models, sleep in luxury beach-side tents, eat gourmet food, and see a rather eclectic lineup that included Major Lazer, Migos, and…Blink 182.

It’s been disputed whether or not the now-infamous cheese sandwich was actually served to Fyre attendees; some outlets reported it was intended to feed festival staff only. Still, the photo elicited horror (and excessively gleeful schadenfreude) from Twitter bystanders for its exact opposite likeness to the high-end culinary experience that was promised on Fyre Festival’s social channels, which included local seafood, Bahamian-style sushi, and even a pig roast.

Both competing docs explore how the over-the-top vision of entrepreneur Billy McFarland came crumbling down once guests began to arrive on the island of Exuma and realized organizers were grossly unprepared and, well, broke. One restaurant owner, MaryAnn Rolle, who, according to The New York Times, catered 1,000 meals every day from her Exuma Point Beach joint in April 2017, used $50,000 of her own savings to pay workers who were stiffed by the Fyre organizers. (At least Rolle’s story has a happier ending than McFarland’s. A GoFundMe campaign has raised more than $179,000 for her losses.)

The failure of Fyre certainly wasn’t a good look for millennials, but it also tarnished the reputation of the cheese sandwich—something we here at Chowhound hold dear and regard as the kind of go-to, satiating meal that has yet to fail us, especially when it comes to feeding your own angry mob/friends/family while hosting Super Bowl Sunday or a last-minute dinner party.

After all, the cheese sandwich offers warm, buttery joy, is the lifeblood for vegetarians, and when served with the right accoutrements, can read like a Michelin-starred restaurant doing comfort food. (Maybe even consider making your own sourdough). Of course, with the overwhelming popularity of both Fyre Festival docs, it’s imperative you don’t approach a cheese sandwich ill-prepared, especially when you’re feeding those who can’t resist an ironic Insta food post or think they’re “really good at making memes.” Which is exactly why we’ve rounded up several no-fail cheese sandwich recipes that will be sure to produce the kind of #goodfoodpics that will only be posted alongside a praise hands emoji.
