Essential Potato Soups to Add to Your Repertoire

Potatoes have a symbiotic relationship with the soup pot. They give soups body, a textural richness that signals comfort. They also enhance other flavors, provide a neutral base for corn or carrots or herbs like chives to show off sweetness or pungency. Potatoes, in other words, are essential for soups, just like these 6 recipes are an essential part of our repertoire.

1. Creamy Potato and Corn Chowder

Chowhound

Bacon, potatoes, and corn are kind of a holy trinity of New England cooking. This rich, comforting, and old-fashioned soup is lovely during summer (if you feel like soup during summer), early fall (when there’s still fresh corn in the market), or deepest winter, with frozen corn. Get our Creamy Potato and Corn Chowder recipe.

2. Potato-Leek Soup

Chowhound

One of the defining dishes of humble, home-style la cuisine bourgeoise of France, potato-leek soup is simple, versatile, and satisfying. Our version calls for four ingredients (not counting salt and black pepper), and comes together in less than an hour. Get our Potato-Leek Soup recipe.

3. Curried Potato and Carrot Soup

Chowhound

If you’re tired of creamy Euro-style potato soups, this recipe’s for you. Coconut milk gives it just a touch of lusciousness but really, it’s about the sweetness and texture of root vegetables and the zing of fresh ginger and curry powder. Use veggie broth and it becomes vegan. Get our Curried Potato and Carrot Soup recipe.

4. Loaded Baked Potato Soup

Chowhound

Make this soup—which mimics the flavors of a fully loaded baked spud—on a cold, dreary day for the perfect warming meal. Cheddar cheese and sour cream are stirred in at the end, and the soup is topped with crispy bacon, chives, and more cheese. Get our Loaded Baked Potato Soup recipe.

5. Summer Corn Chowder

Chowhound

Like most chowders, this one has milk, cream, and chunks of potatoes, but to add texture and maximize the sweet corn flavor, some of the corn kernels are blended with milk. The potatoes are a rich and soothing presence. Get our Summer Corn Chowder recipe.

6. Seven-Vegetable Soup

Chowhound

Chef April Bloomfield’s original recipe may give equal time to a handful of root vegetables, but we know which one’s essential here: the pair of diced Yukon Gold spuds that give this simple, totally satisfying soup body and a certain grounding. Get our Seven-Vegetable Soup recipe.

Minestrone Is a Seasonal Soup: 7 Recipes to Prove It

The simple Italian vegetable soup known as minestrone is a wonder of improvisation and the changing realities of fridge and pantry. In high summer, it’s a soup that highlights tender, barely cooked garden vegetables; in winter, it’s all about incorporating canned and preserved ingredients, and adding things like cured pork and red wine to give it a more substantial flavor. Here, in no particular order, are 7 recipes you can take seasonal inspiration from.

1. Tortellini Minestrone

4. Winter Minestrone

Culinary Style

5. Wild Garlic Minestrone

Chip Butties and Noodle Soup

Get Chip Butties and Noodle Soup’s Wild Garlic Minestrone recipe.

6. Summer Minestrone

Simply Recipes

“When it’s summer’s high season,” writes Elise on Simply Recipes, “and the garden is overflowing with more vegetables than one can reasonably consume, a great way to make use of the bounty is to make minestrone soup.” Get Simply Recipes’ Summer Minestrone recipe.

7. Late Summer Minestrone

Pamela Salzman

Farro and a shopping bagful of farmers’ market vegetables go into this seasonal celebration of minestrone, flavored with Parmesan rinds. “As the seasons change,” writes blogger Pamela Salzman, “so does this soup.” In winter, jarred tomatoes stand in for fresh, cabbage for zucchini. 11 Soup and Thermos Pairings to Tote Around During the Fall

French Provencal garlic soup

As I recently noticed the days getting shorter and the leaves changing color, I had two realizations: 1) It’s fall and 2) I’ve been wasting the last 20 years of my life NOT toting around soups in fun thermoses; that’s right, wasting! I remembered that I had a wonderful Princess Jasmine lunchbox when I was a kid, complete with a plastic soup thermos designed to reward my hard-learnin’, hard-playin’ childhood self with a warm and comforting lunch. Now, why had I forsaken this wonderful autumnal tradition of my youth?

Maybe it’s because I am now (generally) trusted to use a microwave. Or maybe, just maybe, I’ve forgotten how to truly embrace the spirit of fall. Cooler, cozier, a little slower—fall is for chunky sweaters, and chunky soups. Oftentimes I am so focused on the fashion, though, getting my cardigans and boots out of storage, that I sometimes forget about the flavors of fall: the squash pasta dishes that pop up at my favorite restaurants, the pumpkiny drinks at nearby coffee shops, the pies! They come and go before you know it, just like the season itself.

Well, I propose we slow down and enjoy fall in all its glory, as it was meant to be enjoyed: with a warm soup at arm’s length. Let’s go on a carefree stroll in the crisp air, and let’s crunch some leaves underfoot. And let’s pause whenever we feel like it, unscrew the lid to a soup-filled thermos, and let’s sip warm, comforting broth and marvel at (dare I say) the greatest of all seasons.

Here are 11 soup-and-thermos pairings to help fully immerse yourself in the splendor of fall.
