Friday Food Finds: Toasted Coconut Cheerios, Apple Cinnamon Hard Seltzer, Spicy Ben & Jerry’s, and More!

Today’s Chub Chub Chowdown segment on the Taylor Strecker Show was a gigantic success and not just because I didn’t manage to spill anything on myself (like I usually do). Everything we sampled was worthy of a trip to the grocery store. From breakfast items and desserts to healthy snacks and a new hard seltzer, nothing disappointed, which rarely happens. (We’re a judgmental bunch.) Check out everything we tried below and sound off on your favorites. Do any of them deserve a spot on the Top 10 Friday Food Finds of 2019? It’s almost time to finalize this oh-so-coveted list!

Ben & Jerry’s Justice ReMix’d

This knocked our hygge-friendly wool socks off. The cinnamon dough gobs are insane and don’t even get us started on the gooey, decadent brownies that have a welcomed and unexpected kick of cayenne! Since criminal justice reform (which this pint supports) is something we need to support year-round, we encourage Ben & Jerry’s to keep this flavor year-round. Having it disappear from shelves should be considered a punishable felony.

iWon Organics Protein Stix (Mesquite BBQ)

We can’t begin to tell you how excited we are about this brand and their delicious, protein-packed offerings. Mesquite BBQ is just one of many flavors and we are 100 percent here for it and all the protein, fiber, and whole grains it rode in on. These should and will replace any potato chips, pretzels, or other unhealthy snacks you tend to reach for at 3 p.m. when it’s crunch time and you want to leave for the day, so watch your back, Cheetos.

Press Premium Alcohol Seltzer (Apple Cinnamon)

Press already made waves with their Pear Chamomile variety from summer, but this seasonal flavor may taste even better. There is literally zero trace of alcohol, making it a necessary, albeit dangerous addition to all of your fall soirees. In fact, you may even be able to add even more liquor and concoct some clever cocktails. Drink with caution, though, since these are that level of delicious.

Chef’s Cut Biltong (Spicy Chili)

Zero. Sugar. We repeat: zero sugar. This can be quite the difficult accomplishment when it comes to jerky and biltong, particularly those with strong flavorings or seasonings, but Chef’s Cut has found a way to make their product both palatable and healthy. We also like the mouthfeel of the meat itself. It’s sliced very thin and isn’t too hard on the teeth. The fact that one serving is an entire bag is even more reason to celebrate. Who needs a party hat?

Toasted Coconut Cheerios

Even coconut haters will get behind Cheerios’ latest flavor iteration. We were genuinely shocked at how much we liked these, even without a bowl of milk. They’d make an excellent addition to trail mix or yogurt and aren’t overly sweet like their Frosted or Honey Nut counterparts. They’re also the only things we finished on our plate, so that says something. Go get ’em, Tiger! And yes, I’m talking to you, Tony.

Sugar Bowl Bakery Pumpkin Spice Madeleines

Everything about these pumpkin spice madeleines was spot-on except for the texture. Half of us wanted them to be softer and more buttery. The other half wanted them to be harder and almost scone-like. Either way, the flavor was there and really embraced pumpkin spice without tasting artificial. We’d absolutely recommend them with coffee or tea, so call up the queen of England and ask if she’s available to partake. We’re sure she’ll say yes.

Meli’s Monster Cookies (Original)

These cookies came from a boxed mix and we didn’t hate the fact that they tasted exactly like Nutter Butters. That being said, they weren’t for everyone, which means you should probably start with their Choco-Lot flavor to appease anyone beyond your peanut butter-loving self. The entire line is also naturally gluten-free, so you can already shush the one friend who announces dietary restrictions before he or she even walks into the room.

You might notice a glaring omission: Frying up single burgers. But while the miniature skillet might seem like the ideal size for that task, it’s actually a bit too small, and hot fat is more likely to spit out of the pan. So we like to save the big ones for that.

If you still find yourself not using your Lilliputian skillet in the kitchen, you could always turn it into an ornament or statement necklace. We prefer to keep it food-related, though.

So here are 13 ways to use mini cast iron skillets.

1. Toast small amounts of spices or nuts.

No need to turn on the oven or get out a large pan to toast a small handful of spices or nuts for a recipe. Just use your mini skillet (leave it dry; no oil or butter required)—keep a close eye on the ingredients so they don’t burn, and trust your nose to tell you when they’re ready to come off the heat. Dump them onto a small plate, cloth or paper towel, or clean countertop to stop them cooking any further, rather than leaving them in the hot pan where they could carry over. But you can toast and grind whole spices any time conventional pre-ground spices are called for to intensify their flavor in a dish!

2. Make individual servings of mac and cheese, baked egg cups, scalloped potatoes, or anything else.

Many things that can be made in a muffin pan are the right size and consistency to translate well to mini skillets, with the added bonus of looking extra cute when you serve them in said skillet (though watch out for that searing-hot handle). Conversely, you can also take a large-format skillet recipe and shrink it: Make mini queso fundido, mini shepherd’s pie, and more. In either case, if you’re dividing a big batch into small skillets, you just need to have more than one petite pan on hand, but if you’re only cooking for yourself, recipes that don’t rely on precise measurements or that you can easily eyeball down to size are best—think hash, frittatas, and the like.

3. Make a fried egg for one.

This is even better if you cook a little diced bacon in the skillet first. You end up with a perfectly round egg that’s ideal for topping breakfast sandwiches.

4. Use it as a meat mallet.

If you somehow have one of these little guys but no kitchen mallet, you can use the sturdy mini skillet instead. Use it to pound chicken, pork, or beef flat for dishes that require an even thickness, like schnitzel, chicken piccata or milanese, and chicken fried steak. It could even help you crack into your steamed lobster or blue crab in a pinch.

5. Serve tapas a la plancha.

“A la plancha” technically refers to food made on a specific type of cookware (a plancha, which is something like a Spanish griddle), but a cast iron skillet serves the same purpose, and a mini skillet is the perfect size for small plates/tapas. Just skip the stick and place a few wrapped shrimp in the mini skillet instead, then pop it in the oven to broil (and feel free to swap in jamon as well). 7. Make mini cobblers, crumbles, and crisps.

Humble crumbles, cobblers, and crisps are ideal desserts to make in mini skillets, because you don’t have to precisely measure the ingredients to get a great result (more so with crisps and crumbles than cobblers, unless you take the shortcut of store-bought biscuit dough). 8. Make kid-size quesadillas.

9. Infuse oil for an appetizer.

Gently warm up some olive oil with sliced garlic, whole spices, citrus zest, and other aromatics in the skillet to infuse it for an easy but elegant appetizer when you add toasted bread. 11. Serve individual shakshuka.

Shakshuka is an easy breakfast, lunch, or dinner for one when you toss it together in a little skillet—or you can divide a full-size shakshuka recipe into several skillets for an Instagram-worthy brunch spread.

12. Make personal potato cakes.

Most wheels of Camembert are perfectly sized for mini skillets (and some baby brie wheels are the right size too), so pop one in there and run it under the broiler until melted and bronzed. Top with fruit preserves and nuts for extra oomph, and serve with crackers or toast for dipping. But seriously, shell out for that mini handle protector or someone’s gonna get burned.
