What Is a Pupusa?

It’s the most wonderful time of the year and the big question is: What is a pupusa? A beloved  Salvadoran dish made of  a thick corn tortilla and stuffed with a savory filling.  You just mix together masa flour, salt, and water to make up the dough and then you can add in any kind of savory filling—typical options include beef, beans, cheese, and pork. These masa cakes are an authentic Salvadoran street food and are a great option for entertaining. Pupusas are often served with curtido, a fermented cabbage relish, which usually includes carrots, onions, spices, and garlic.

Pupusas are the national dish of El Salvador and can easily be made in advance. They’re best when fried up in some oil and served soon thereafter, still warm with a generous helping of curtido. Pupusas are found in neighboring countries of El Salvador, and it’s also argued that they originated in Honduras. Pupusas are also very similar in construction to Venezuelan arepas, and the Mexican dish, gorditas.

But can you eat pupusas for Christmas? Our official answer is: Sure, why not? Pupusas are an excellent dish to make ahead of the big meal and you can change up the fillings to suit any taste—serve pork, chicken, or meat pupusas with a combination of bean and cheese fillings to appease any of your vegetarian relatives and you’ve got a flawless Christmas dinner ready to roll. You can even make vegan pupusas with beans or vegan cheese; they’re an incredibly versatile dish that you can spice up in any way you see fit. In fact, they’re an ideal vehicle for serving leftovers—if you’re making prime rib for Christmas Eve dinner be sure to save a portion for Christmas Day pupusas! They’re also great served as leftovers themselves, so if you make them for Christmas Eve dinner you’ll have a lovely snack ready to serve as a holiday lunch the next day.

These Decadent Takes on Babka and Rugelach Are What You Need This Holiday Season

If you’ve been missing out on the doughy awesomeness that is babka, then Hanukkah is the perfect opportunity to rectify that situation. So what is babka anyway? (Besides delicious, of course.) It’s a dense, swirled bread, usually layered with chocolate or cinnamon. It’s often topped off with sugary streusel for extra sweetness. The contrast of dry and sticky layers makes for a perfect texture that’s both thick and airy. As a classic episode of “Seinfeld” attests, “You can’t beat a babka.”

At one point the Eastern European dessert was tough to come by in America. Unless you lived near a gourmet bakery or had a Jewish grandma, you probably lacked access to one of the best sweets on the planet. That was decades ago, though. Now neighborhood grocery stores, and even Trader Joe’s carry them, so you can get your babka fix anytime.

When it comes to flavor, chocolate babka is ideal. And nobody knows this better than Breads Bakery. The New York eatery takes their chocolate babka to a whole other level by contorting the baked good into a pie! They intricately braid strands of dough into a unique circular shape and then mold it into pie crust. It’s a creative spin on a classic dessert that we couldn’t endorse more. The amount of Nutella used to create this hybrid alone is a sight to behold.

If you’re looking for more Yiddish goodies to nosh on this holiday season, try rugelach. These pastries are traditionally crescent-shaped, with a triangle of dough circling a filling. Raisins, walnuts, cinnamon, and fruit preserves are all popular variations. But once again we’re declaring chocolate the victor.

For an even more decadent take on the rugelach, we again turn to Breads Bakery. One of their most ambitious creations is this ginormous rugelach-branched Christmas tree. It may seem ironic at first, but honestly what could be a better baked good for inter-faith celebrations! It’s also perfect for people who can’t get enough Nutella. (Did we mention we really, really like Nutella?)

The 12 Days of Flatbreads for Christmas

Is it just me or is your fridge getting uncomfortably full? While we are in a season of plenty, too much plenty results in leftovers that desperately need spicing up. Yet, the problem with reusing food is that the portions never seem to match a whole meal, right? That is why I’ve started to use one of the sneakiest and most savory ways to transform a fridge, as well as bring a touch of gourmet to holiday events and those many, many cold days in between.

I make flatbreads.

A flatbread is simply a bread made out of flour, water, and salt that is then thoroughly rolled into flattened dough. Flatbread can be slightly leavened, like pita, or unleavened, like matzah or a tortilla. Leavening just means adding some yeast and allowing the bread to rise before cooking. It’s so easy that the world is full of culturally specific examples such as naan, pizza, chapati, roti, arepas, etc.

Once you pick a flatbread of choice, you can add your favorite (or leftover) things, some tart cheese, and voila! You’ve made a dish that looks fancy, can be enjoyed at home or at your next party, and you are finally making gains toward having regular fridge space. Can I get an amen? Thank you!
