These One-Pan Dinner Recipes Are Ridiculously Easy to Make

As though the glorious return of pumpkin spice, blazer weather, and technicolor foliage wasn’t enough, here’s the true reason why I celebrate the coming of fall: I can again bear to use my oven. Even with the most diligent of air conditioners, something about intentionally setting a dial in the hundreds of degrees when the air outside feels comparable to that just doesn’t leave a person super hungry for warm, roasty dishes.

Although no-bake season is drawing to a close, it’s still not quite time for the day-long cooking projects that a proper snow day inspires. There are plenty of daylight hours left to enjoy and numerous reasons to go play outside. In short, ain’t nobody got time to do dishes, even for the yummiest, most comforting cool-weather dinners.

The solution? One-pan, oven-cooked meals for fall. Quicker than your slow cooker, less labor-intensive than even one-pot stovetop dishes; you can pop a sheet pan in the oven and literally set it and forget it while you go jump in a pile of leaves or take a brisk, contemplative walk. With basically only one dish to wash after dinner, you’ll have time for any number of bucolic, autumnal, Instagram-worthy pursuits.

Sausage and Root Vegetable Scramble

How about a technicolor pile of fall produce to match your equally lively pile of leaves? Toss in some sausage rounds—maybe something from your local farm stand—for a dinner that is as photogenic as it is well-balanced. Get the Sausage and Root Vegetable Scramble recipe.

Harissa Baked Chicken

If you’re not yet hip to the glory that is bright and spicy harissa, take heed. This North African spice blend can be bought prepared or made from scratch, and either way will give extreme pizzazz previously unseen on your average Tuesday night chicken dinner. Get the Harissa Baked Chicken recipe.

Mediterranean Baked Shrimp and Veggies

Shrimp are such a quick-cooking protein that they are not oft-imagined as an oven-based dish. Here they are added to the pan after the veggies are underway, escorted by a sauce fragrant with sumac and cumin for a result that is simply where-have-you-been-all-my-life? Get the Mediterranean Baked Shrimp and Veggies recipe.

Sheet Pan Ricotta Frittata

Yep, you don’t even need to begin this on the stovetop. Eggs, veggies, and ricotta mingle directly in the pan for a Meatless Monday meal that masterfully morphs into a morning-after breakfast sammy. Get the Sheet Pan Ricotta Frittata recipe.

Sheet Pan Steak Fajitas

You won’t even miss the sizzle when you realize that every aspect of these fajitas—from the meat, to the veggies, to the tortillas, to even the lime you drizzle at the end—can be prepared all in the same pan. The bounty of fall is real, y’all. Get the Sheet Pan Steak Fajitas recipe.

Thai Glazed Salmon and Vegetables

Some seek fall colors in the form of leaves and sunsets, for my money I’ll take salmon with a sweet and salty Thai glaze for a dose of vibrant orange. Get the Thai Glazed Salmon and Vegetables recipe.

Parmesan Pork Chops with Potatoes and Asparagus

If you come from the Midwestern dinner-table school of protein/starch/veg like I did, you will appreciate the simple beauty of this combo, given extra vitality with just a bit of Parmesan and panko. Send a picture to your mother for extra warm and cozy vibes. Get the Parmesan Pork Chops with Potatoes and Asparagus recipe.

You’ll Fall for This Five Ingredient Apple Dumpling Recipe

easy apple dumpling recipe

These easy apple dumplings are the ideal fall dessert and they only take five ingredients. Plus, they freeze beautifully.

Have you checked your Instagram feed as of late? If you have, you know everyone is out in the apple fields picking Galas, Winesaps, and Red Delicious to their heart’s content with multiple posts on social media of picking, eating, and of course, the apple pies that follow. Well, I like to bake, but I’m not the most skilled when it comes to crimping, the butter/flour ratio, lattice tops, and all that jazz. Many don’t realize, however, making a fantastic pie takes a significant amount of skill.

So, when I get home from the apple orchard and have seven bags of apples to get through, I need some fast and easy ways to enjoy the bounty.

apples in history and pop culture; the historical and cultural significance of apples

From this need for speed and deliciousness, apple dumplings were born. What’s an apple dumpling, you ask? Let me explain.

The Beauty of Apple Dumplings

You may be picturing some sort of soup with floating apples, but nope, this is even easier than that. All you need is five ingredients and almost zero baking skills, and you can pull off this fun little dessert that freezes well, is ready in half an hour, and is the baked apple of your dreams—interested yet? Good, read on.

Peel and core your favorite apples, make a little flour/sugar/cinnamon mix, and roll out a sheet of your favorite puff pastry. You can get fancy with Dufour or grab a package at Trader Joe’s.

After giving them a nice roll in the flour mix, wrap ’em up in the puff pastry and give them a quick blast in the freezer. The chill helps the puff pastry stay in place as the middle gets warm, soft, and gooey.

Better yet? Make a whole bunch ahead of time and take them out of the freezer as the dumpling craving erupts. After having this, you may just quit that lattice top for good.

Easy Apple Dumpling Recipe

The pat of butter inside each dumpling is optional, but highly recommended. The egg wash is optional too, but will give your dumplings a glossier shine.

Five Ingredient Apple Dumplings

Prep Time: 15 minutesCook Time: 45 minutesServes: 6
Ingredients
  • 6 apples of your choice, peeled and cored
  • ½ cup AP flour
  • ½ cup brown sugar
  • 2 tablespoons cinnamon
  • 1 large sheet frozen puff pastry, defrosted
  • ½ stick unsalted butter
  • 1 egg, for egg wash
  • Vanilla ice cream
  • Whipped cream
Instructions
  1. Preheat the oven to 375 degrees.
  2. Peel and core the apples.
  3. In a medium bowl, combine flour, brown sugar, and cinnamon. Roll each apple to cover with the mixture.
  4. Roll out the puff pastry and cut into squares. Place one apple in the center of each square and add a tablespoon of the flour/sugar mixture to the center well. Top with a small pat of butter (optional). Pull up the sides of the pastry to cover the apple. Pinch at the top to seal closed.
  5. Brush with egg wash for a glossier finish (optional).
  6. Place apples in the freezer for fifteen minutes to chill the pastry. The time in the freezer will prevent the puff pastry from sliding down the apple. Also, they keep for up to two weeks, so keep them for an apple dumpling craving!
  7. Remove from the freezer and place on a cookie sheet. Bake for 45 minutes to an hour, based on the size of the apple.
  8. To check if they are ready, slide a knife into the apple. It should be very soft and slip right out.
  9. Serve with vanilla ice cream or whipped cream or both!
