Game Meat Recipes for the Big Game

Elk Meatballs with Bourbon Barbecue Sauce recipe

The Super Bowl, by any other name, is one of the biggest sporting (and TV-watching) events of the year, and a prime time for packing away massive amounts of food, much of it meaty. Given the occasion’s affinity for beefy, bar-appropriate snacks and the fact that its other most common moniker is “The Big Game,” we created a menu of game meats for the occasion back in 2011—which we think is well worth re-visiting now. These creative riffs on classic sports bar food using actual game meats like elk, venison, and duck are all inspired (if we do say so ourselves) and delicious.

However you procure your game meat, this book has plenty of tips and recipes for preparing it.

Game meats have only gotten more popular since we first dreamed this menu up; naturally, you can order all sorts of game meat online if you have trouble sourcing them locally—see Fossil Farms and Nicky USA, just for starters. If you’re still hesitant to try them, rest assured, none of these recipes taste remotely gamy. But if you refuse to be convinced, they also work perfectly well with your more common pork and beef. Or, there’s always buffalo wings!

Pile this lean and flavorful bison chili on top of bison dogs if you want to stay on-theme, and pile plenty of shredded cheddar cheese, diced onions, and pickled jalapeƱos on top of that, because obviously that’s the best play. Get our Bison Chili Cheese Dogs recipe.

If you’re not a hunter (or friends with one), you can order wild boar online, though it’ll cost you. Turn it into tender carnitas and fold it into tacos for a real treat, but don’t feel like you deserve a penalty if you opt for more affordable pork—which is just as good, especially if you get it  from a source like ButcherBox. If you’ve only had one type of meat from this menu before, duck is probably it. But have you had it encased in shattering-crisp spring rolls dipped in a hoisin-plum sauce? If not, you owe it to yourself to try this. Get our Duck Confit Fried Spring Rolls recipe.

Homemade Italian sausage tastes amazing, whether you include venison or go all-beef (or pork, or some mix of the above). Topped with melting-soft onions and peppers and a gooey blanket of cheese, it’s even better. Get our Italian Venison Sausage Sandwiches with Peppers and Onions recipe.

On the milder, sweeter side of the game meat spectrum, elk is a great choice for meatballs, but a little ground pork helps keep it moist. A bourbon barbecue sauce doesn’t hurt, either. Spear these with toothpicks as part of an appetizer platter, or pile them in buns for hefty sandwiches. Get our Elk Meatballs with Bourbon Barbecue Sauce recipe.
