Regardless of how chili made its way to America, you just have to be grateful that it did. After all, what’s better than a few scoops for your Saturday lunch? Recipes often call for kidney beans because they amp up the flavors of the spices and take the heat well (and you know things are going to get hot). ) . Terrific quick one for your meal plan this week! Just be careful taste testing out of the pot – I scorch my mouth every single time (patience is a virtue I do not possess…..) – N x ❤️ . One Pot Chili Mac and Cheese | Serves 5 – 6 . INGREDIENTS 1 tbsp olive oil, 2 garlic cloves minced, 1 onion, finely chopped 1 red capsicum/bell peppers chopped 500g / 1 lb ground beef (mince), I use lean 800g/28oz crushed canned tomato, 420g/14oz red kidney beans, drained 2 1/2 cups beef broth (chicken broth also ok) 250g elbow macaroni pasta (elbow pasta), uncooked 1 ½ – 2 cups / 150 – 200g shredded cheese (cheddar, Monterey Jack, tasty cheese) Coriander / cilantro finely chopped, for garnish Spices (Homemade Chili Powder): 1 tsp EACH cayenne pepper, dried oregano 2 tsp EACH paprika, cumin powder 1 1/2 tsp onion powder (can sub garlic powder) ½ tsp black pepper + ¾ tsp salt . DIRECTIONS 1 . Heat oil in large pot over high heat. Add garlic and onion, cook for 1 minute. Then add capsicum and cook until onion is translucent. 2. Add beef and cook, breaking it up as you go. 3. Once the beef turns from red to brown, add remaining ingredients except cheese. Stir, bring to simmer, then turn the heat down to medium. Cover and cook for 10 minutes or until the macaroni is al dente, meaning just cooked, still a bit on the firm side. 4. Turn the stove OFF but leave the pot on the stove. Stir through half the cheese – it should be a bit saucy. Adjust salt and pepper to taste. Top with remaining cheese, put the lid back on and leave until the cheese melts – about 2 minutes. 5. . . Also, here’s my trick to making this a beanless chili. Sub beans and grains for chopped sweet potato (duh) and then cauliflower rice. It adds in more bulk! .
